The „Rosso del Ticino” maize is an ancient local variety from Ticino, rediscovered and preserved by Pro Specie Rara. Reintroduced in 2002 for polenta flour production, this variety is not a hybrid but a population with natural genetic diversity. Grown organically on Ticino farms, the maize is harvested in cobs and ground whole to preserve its nutritional value and local tradition. The product emphasizes local production and processing, respecting historical and cultural characteristics.
