Quince mostarda purée

The unique sweet flavour of quince comes to life in the creation of this mostarda purée, which becomes a sweet sauce with a slightly pungent taste. Its best combination is with semi-aged cheeses but also with roasts, both hot and cold. Try it as well with smoked ham to enhance its unique flavour.
